Great post as usual MD. I made the same thing last night. Used andouille and cooked it a little different but it came out great.

i have never really cooked with okra. I will eat it but I have a memory of my buddy cooking frozen okra in the microwave and it would be so slimy and grossed me out.

When you cook with okra like this, will it be slimy?

There’s a way to keep the slime factor down. After you cook it down the first time, you can squeeze it through some cheese cloth and that cuts down on the sliminess. Then just add it back to the pan/pot. It won’t lose flavor. Just slime.

In my opinion, when you smother okra, you are cooking it long past the slime factor. Or maybe it's the acid in the tomatoes, or both.

ETA: And y'all have given me such an envie, I'll probably be cooking some today!

Glad to see you back to cooking MD

This recipe sounds right up my alley. And there’s enough pics and instructions that I might be able to take a shot at it
