Chicken stew is better than thin chicken gumbo. And chicken stew isn't necessarily native to Louisiana. So how could chicken sausage gumbo be the tops? It's not.

For gumbo, and in general, I like a very plain potato salad. Potatoes, eggs, mayo, salt, and pepper. Any light on the mayo so it has some structural integrity. No dill or mustard and for damned sure no capers.
Also, I'm very happy the "deconstructed" phase has passed us by.

Never heard of serving potato salad with gumbo. Cornbread sounds ok but gumbo is served over rice which adds enough carbs on it's own. I know that some people just use chicken and sausage but I think the seafood adds essential flavor.

I cook gumbo either just land animals or just aquatic animals. I like a good, well smoked sausage in my chicken and sausage gumbo, and putting that in a seafood one over powers the seafood flavor.
My exception is oysters in a duck and sausage gumbo. For some reason those flavors still blend well.
