This guy didn't wonder over to this board when writing the article but overall I liked the article. People tend to get a little pissy about that debate. I cook my chicken and sausage according to Donald Link's recipe from real cajun but, just as the article suggests, I vary the hell out of it. I use it mainly for the spices and their measurements. I also throw almost all of the spices in after throwing the trinity into the roux and it cooking for a few minutes before combing the liquid with the roux.
I have done a few seafood gumbos but I've never cared for seafood gumbo by anyone. I've always viewed it as a costly ordeal and now its even crazier what it would cost to cook it.

i'll do a shrimp gumbo or okra gumbo with shrimp in it but i dont do all that crab in the shell seafood gumbo BS

It's fine if you don't do it but seafood gumbo with cracked crab in the shell is legitimate as it gets

I don’t mind a scoop of potato salad in my gumbo but do some people serve their gumbo over straight tater salad?

when i make mine its with loose limp crab meat not in the shell
i have had it at restaurants and it is good but damn i hate the mess, its either finger food or its not, dont give me a bowl of liquid then i gotta peel my own crab meat out of the shell. thats just a bridge too far for my liking
but then i also hate shrimp cooked with the tails still on for the same reason, make a decision, i either eat with utensils, or my hands, but i dont want to go back and forth with it

90g plain flour
4 tbsp mild olive oil
225g okra, trimmed and sliced into rounds
180g tinned plum tomatoes
1 large onion, peeled and finely diced
200g celery sticks, finely diced
1 bay leaf
2 garlic cloves, finely diced
¼ tsp dried thyme
½ tsp dried oregano
½ tsp dried basil
¼ tsp ground cayenne pepper
1.5L seafood stock
225g crab meat (a mix of white and brown is best)
250g shelled raw prawns
cooked white rice, to serve

Wholeheartedly agree. Frickin' tomatoes.
So I have not done potato salad with gumbo before. Whose got a good gumbo ready potato salad?
I typically do chicken & sausage over rice. I boil my own chicken flavoring the water myself before the boil. Make my own roux spending 20 minutes stirring it in the cast iron pot.

Seafood gumbo shits all over chicken and sausage gumbo and it isn't even close. Chicken and sausage gumbo is by far the worst of the Louisiana dishes. Uninspiring and nothing special.
