Crawfish in seafood gumbo?

Went to a function last night in Savannah that had seafood gumbo for the first course. Shrimp, crab and crawfish. To me the crawfish was unnecessary, and frankly, kind of ruined it. Just didn’t go with the other flavors imo. What is the coonass take on crawfish in gumbo, yay or nay?

Personally, nay. I always use leftover crawfish for fettuccini or etouffee. But I’d rather crawfish than tomatoes.

I cannot recall ever seeing that in seafood gumbo.

I prefer not to have crawfish in seafood gumbo, but it's not a deal breaker. I make crawfish gumbo from time to time.

I've bought seafood gumbo from several South Louisiana places which have more crawfish than other seafoods. Still tasty, but not my preference.

I was reading a James Lee Burke book last night and Dave Robicheaux heated up some frozen crawfish gumbo. I started trying to recall having a crawfish only gumbo but could only think of having some gumbos that had crawfish in addition to shrimp/crab. Funny to see this thread because I thought about asking the same thing

Crawfish makes things taste like crawfish. So if there is a measurable amount of crawfish in a seafood gumbo it becomes a crawfish gumbo. I would rather a seafood gumbo, where the flavors of shrimp, crab and oysters meld together rather than a crawfish gumbo.

I never even knew this was a pet peeve of lots of cajuns until the last decade.

I'm indifferent. I like any combination of shrimp, crawfish, crab, and oysters in a seafood gumbo.

I've done scallops in it before because I needed more meat and it came out ok, not great.

But please, leave fish out of any gumbo.

Seafood gumbo is typically shrimp, crab, oyster. I'd say no to crawfish, but if you want it, go for it.

Gotcha. I live in Savannah and have never found good gumbo. Always a tomato and okra stew/soup.

I do not like crawfish in my gumbo. Skrimp, crab and oysters.
But I'm not going to shame someone for putting crawfish in a seafood gumbo like I will tomatoes.
Also, sausage doesn't belong in seafood gumbo.

I seriously doubt those little tails did anything to the flavor of the gumbo.

If you don’t think a bunch of crawfish tails can alter the flavor and texture of something I don’t know what to tell you. Whether you like it or not is the point of contention, and the purpose of the thread. I like crawfish. Like crawfish dishes. I’m not crazy about it in gumbo

Actually, crawfish does change the flavor.

I wouldn’t be shocked if there was some tomato paste introduced at some point, probably on the shrimp shells in the stock, but it was certainly not “tomato based”. There was okra but it was properly done and proportional. Pretty gumbo. Nice dark roux, not over cooked shrimp, crab meat and bodies. And a shitload of crawfish.
