A few tails in a cup/bowl of gumbo? Unless they are fishy tasting they definitely don’t do much to the flavor.

Not for me. Love a good crawfish stew. Lots of great ways to use crawfish but gumbo isn’t on my list.

Typically, there are more than a few tails. It’s also not about how many are in your bowl. It about how many were in the batch of gumbo. I’ve not experienced a fishy taste, but the flavor is different from a seafood gumbo with shrimp, crab and oysters.
