Crawfish Boil Reminder: Salt "purging" does nothing.

There is no evidence from this study that suggests the use of salt in cleansing crawfish was beneficial, but results do indicate that a saltwater bath may contribute to increased mortality, if washed crawfish are subjected to refrigerated storage for several days prior to cooking. Conventional commercial style purging for 12 hours or longer is the only known way to significantly reduce the size of the hindgut in cooked crawfish, and that method is usually not practical for consumers.

But, but, but pawpaw always purged and he learned it from a REAL Cajun who spoke French and was the first one to boil crawfish before anyone else. He also left his gumbo in the pot overnight and never got sick.

Definitely wash, and thoroughly.
It would be nice to rig some kind of aerated vat to do a true purge like the study mentions. Wonder how involved that would be to do a sack or two?

Why even bring this shite up, science has said it does nothing for years, those that want to, will still do it, and it does nothing negative, let them do it, but why fight over it

It’s the fact that science proves something, but some still won’t accept it, which doesn’t bother anyone. But those people always want to tell you you’re wrong.

Yeah my dad was one of them, took me a bit of trying but finally got him just washing them without salt. At first I think he thought I just wanted him to skip the entire step of washing them out.

Most likely the salters are watching someone else prep crawfish and saying "gross, gotta purge"

I watched something on YouTube a couple of years ago and this company sold crawfish that were left in huge troughs for around 24-36 hours. They said people could do it at home but most mess up because they don't realize how much oxygen the crawfish go through. The key was lots of aeration, more than you would think is necessary.
I too have always wanted to try it just for the hell of it.

At this point, let’s just label crawfish as a luxury item. It’s a matter of time before it’s more expensive than lobsters.

My college professor had done this study 30 years ago. In our seafood processing class, he told us how salt doesn’t do anything and explained why. I’ll never forget when he said “even if salt did make them throw up, how does that help, you aren’t eating their stomachs!” I felt like my whole life was a lie.
