Cooking Jambalaya for about 250-350..

I've been wanting to do this for a while; I've been procrastinating for, oh, 4 or 5 years.

To force the issue, I volunteered to cook it for my tailgate. I've been part of doing this several times but never flown solo.

I need some help. Which/how big of a pot? Burner? Recipes?

Anyone have a used pot set up for sale?

Any help appreciated.

PS: I have the Jambalaya Calculator v7.0.

You'll need at minimum 2 20 gallon pots...or the resources to cook a batch, clean out your pot and cook another

Ok, being actually helpful I can say this:

You don’t need jambalaya for 250-350 servings. Even if your tailgate is that big, jambalaya will not be their only meal. Figure enough for everyone to get a small taste, not even a small serving in the calculator. Think maybe 1/2 of that. Cook for 100-120 of the small servings. If you run through that, oh well, it’ll be game time.

Just need the rules of thumb. 250-350, so let’s say 300. Use “6” as magic number. 300 divided by 6 equals 50 lbs of rice. Then double for meat- 100 lbs of meat (Pork and sausage). Like earlier poster said, gonna need two 20 gallon pots or better. Normally use the 10 or 11inch banjo burners for this size pot.

I've cooked for a Red Cross triathlon fundraiser with 500+ participants and used a 30 gal. pot. Also had 25 gallons of red beans.

A 30 gal. cast iron pot should be plenty enough.

This

Make sure you have a side I’m a 5 gal pot. Green beans are an easy side to do.

Gotta say, that's a hell of an undertaking for your first time out. All I can do is wish you well when tackling this and hope it's not too hot of a day to be standing over the pots needed to pull this off.


ETA: Like mentioned in another post, this is not the only thing people will be eating, so you don't have to cook enough to make it the brunt of an entire meal.

My brother-in-law lives near the parade route for Endymion and had 50+ people that come to his house for the parade. I cook a 5 gallon pot of jambalaya and that is more than enough considering he has pulled pork, hot dogs and chili, chips and other snack food offered. At the end of the day he usually has left over jambalaya.

If the serving sizes are small, yes.

Dude, why in the WORLD would you volunteer to cook for that large a group unless you were experienced as hell and had the proper equipment???? Im worried about your prospects for success if you have to ask my brotha.

You'll need 2 20 gallon pots with some cushion with 20 lbs of each item for each batch. that would be enough for 400...your call on going smaller. Some would say 30 gallon will do it, Id agree but would hate to see you run short.

Tip- serve dinner rolls with it; cheap and people eat a lot and fill up on them.

I agree with some posters here. You will need 30 gallons for 300. Might be easier to cook two 20’s. Cook some white beans to go with it along with some rolls or sliced white bread.

Another tip.... if you’re dead set on this. frick a normal jam and make a pastalaya with some penne pasta. Hard to frick up thick pasta like that. Probably need 30-40lbs of pasta.

It was a decent serving in a 12 oz. styrofoam bowl. Grated there was other foods and the red beans also. Still, we had plenty enough to go around.






What leftovers we had we delivered to the Scottsboro police dept. and one of the fire stations near the Goosepond Colony in Scottsboro AL.
This was the third or fourth year myself and two friends did this.

Yep, I agree. I’ve got what was sold as a thirty gallon rig. I have no problem putting 50 lbs of rice, 110-120 lbs of meat and enough needed veggies. Done it more times than I can count...that’s cooking a Jambalaya the way I do. More meat in a catered gig but a good ratio for a benefit cook. Want to make a dollar for the cause and still keep my name respectable. :) It will be more than enough to serve the crowd at a tailgate with the numbers the OP Is asking about. Bring some go boxes.
