Cobbler Recipe Needed

My son asked if I could cook fruit cobblers and I said sure. I look online and there are various types with various types of toppings. Anyone have a recipe to share that they like?

i love the cake mix one. i simply drain my peaches. well.......almost all the way. i butter a pan, put the peaches in the pan, sprinkle one box of yellow cake mix (dry) on the peaches. then.......i cut pieces of butter and put them 2" apart throughout the cake mix.

I haven't made it yet, but this is the type I grew up eating.

Bring fruit, sugar, and a cup or so of water to a boil. Tart fruits like blackberries take a little extra sugar. Boil gently until a syrup forms but not so long that the fruit breaks down completely.

Make a double pie crust. You can use ready-made. Butter a baking dish. Put a small layer of fruit in baking dish, layer a nice layer of strips of crust, more fruit, small pats of butter and a light sprinkling of sugar. Continue the layers, ending with crust and butter and a sprinkle of sugar.

Bake 350 for about 45 minutes to allow crust to cook in fruit syrup and brown on top. Serve with vanilla ice cream.

Peach Cobbler

This is the one I've been using for a while. It's a better version of the basic one. I think for peach, the brown sugar, cinnamon, and lemon juice really take it up a notch.

Basic 1-1-1 Cobbler for any fruit

This is the old fashioned, basic cobbler. I'd use regular flour and add a teaspoon of baking powder. I just didn't want to retype, so included a link instead.

The pie crust ones are all fancy and pretty, but that's not what my country girl self grew up eating in rural Louisiana. I love the one in the first link, but the 2nd one is the basic one I grew up on. We didn't eat it with ice cream either. My grandmother put half and half or a little cream on it instead of ice cream.

Louisiana Fish Fry makes (or used to) a cobbler mix that was pretty damn good and ridiculously easy.

9x13 pan
30-45 ounces peaches in heavy syrup
1.5 cups self rising flour
3/4 cups sugar
1.5 cups milk
1 stick butter

Melt butter in pan. Mix flour, sugar, milk and pour into pan. Pour peaches on top. Do not drain peaches. Bake at 350 for 40 minutes.

sub fresh peaches for canned, use Steens can (add brown sugar) cinnamon and vanilla

This is actually really good

But I prefer apple or blackberry

This one has the sweet biscuit type topping vs the thin pie crust type,



Blackberry cobbler

(I like to Make 50% more dough)

1 cup all-purpose flour
1 1/2 cups white sugar, divided
1 teaspoon baking powder
1/2 teaspoon salt
6 tablespoons cold butter
1/4 cup boiling water
2 tablespoons cornstarch
1/4 cup cold water
1 tablespoon lemon juice
4 cups fresh blackberries, rinsed and drained
Directions
Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil.
In a large bowl, mix the flour, 1/2 cup sugar, baking powder, and salt. Cut in butter until the mixture resembles coarse crumbs. Stir in 1/4 cup boiling water just until mixture is evenly moist.
In a separate bowl, dissolve the cornstarch in cold water. Mix in remaining 1 cup sugar, lemon juice, and blackberries. Transfer to a cast iron skillet, and bring to a boil, stirring frequently. Drop dough into the skillet by spoonfuls. Place skillet on the foil lined baking sheet.
Bake 25 minutes in the preheated oven, until dough is golden brown.

Here is one more easy to make cobbler.

Cobblers

2 to 4 servings

A cobbler can be made with a variety of fruits mixed with dough and baked. I use black berry (actually dew berries), peach and apple because they are what I like. The amount of fruit and dough can be varied depending on if you like more fruit or more dough.

Dough

• Melt about ¼ cup of butter.
• Mix about 1 cup Pioneer Buttermilk biscuit mix with milk, until thick and creamy smooth.
• Add about 3 ot 5 tablespoons sugar and mix.

Fruit filling

Use about 1 to 1.5 cups, of one of these suggestions:

1. If using black berries, they should be well sweetened.
2. Fresh fruit can be used. If so, cut up the fruit into thin slices and sprinkle with 3 or more tablespoons of sugar. The sugar will bring out a little juice to flavor the cobbler.
3. 1 or 2 cans of your favorite fruit “pie filling” in heavy syrup.
4. Or, one of my favorites, is fresh blueberries.


Cobbler Preparation

Select size of baking pan so that after fruit and dough are mixed it will be about 1½” thick. About 9x9 inches.

• Add about half of the Fruit filling to pan and spread evenly.
• Spoon in about half of the dough spreading it over the surface.
• Mix the dough and filling a little but keep the dough evenly spread out.
• Add remaining filling.
• Spoon in some of the remaining dough and mix a little.
• Spoon in the remaining dough on top and spread evenly.


Cooking

Preheat oven to 375 deg. F.........cook about 25 minutes...........until golden brown.

This can also be done using a Dutch Oven and cooking with coals from a campfire. Be careful not to use too many coals (too hot). It is better to take a little longer than to burn the cobbler.


Serving

Serve hot with lots of Vanilla ice cream.

IIRC it has cinnamon
Was good but not a fan of cinnamon in cobbler
