Yes, choke spaghetti is a real, but very regional term for a south LA dish. What I'm trying to figure out is how widely distributed it is....if you know what it is, please mention your geographic location (or where you heard of it/ate it/who cooked it). Thx, y'all.

I had an older relative who made a stewed okra dish that sort of looked like this one.
She called it choke okra, but I have no idea why.

The name is used on southern bayou Lafourche to describe a pasta dish--the noodles are cooked in the sauce. Usually the trinity, plus whole tomatoes or canned tomato sauce, garlic, a little sugar, and either cut-up smoked sausage or beaucoup shrimp or crabmeat. The defining element is cooking the pasta directly in the rather thick sauce. "Choke" is a reference to smothering, ie, etouffee.
It's similar to what modern cajun cooks call pastalaya, but "choke spaghetti" has been in use since at least the 1960s to refer to the dish. Have heard it all my life, and only recently realized that it is a pretty hyper-local term.

Oh, that. It started in Winnfield and was originally called joke spaghetti. The name was modified as it ventured south and picked up the seafood elements.
