Chili made with packets

Gonna make a chili and was going to use the packets for flavor. Any ideas you guys to use to doctor it up. Of course I’ll have onion, bells and celery

I get the Wick Fowler’s and do the trinity like you are doing.
Sometimes I use half ground beef and half sausage.
I use a can of Rotel instead of sauce or diced tomatoes.
I tried beer once for a bit of liquid. Made it bitter. But maybe a stout would be better.

I like the 2 Alarm Chili mix. Makes a fine chili.

I use that with 80/20 chuck or venison, a diced onion, garlic, a poblano or jalapeño, can of fire grilled tomatoes, and a can of kidney or pinto beans.

Use onions, peppers...no celery. And the Hershey bar is money.


Use a little corn meal to tighten it up.

I put a squirt of Hershey’s syrup in mine. I also add white pepper and juuust a touch of fish sauce. If you are afraid to try the fish sauce, put a tsp of worcheshire sauce in a 1lb making.

I prefer Carrol Shelby to Wicks, to us it is more beefy tasting as opposed to chili powder. Harder to find but give it a shot.

I prefer a tablespoon of cocoa powder, and I also add a bottle of dark beer. A tiny pinch of cinnamon is good, too.

I figured out half the items in the packet I throw away (dried onion/BP, masa, salt), and the rest is just chill powder, paprika, cayenne, and cumin.

I just do it myself now... better control. Yes to a dark beer. Whatever tomato products you like. Roasted/peeled/deseeded poblano is a plus. No to sugar( this isn’t spaghetti sauce).

I use 2 Alarm chilli with a couple "Mods"

I brown my meat (I use 3 pounds instead of 2) take it out to drain and brown an onion along with a can of original rotel. From there on I follow package directions till everything is incorporated. When it comes back to a hard summer I add about 15 semi-sweet chocolate chips to give it an little sweetness and smooth it out.

Might not be award winning or purist but it's very good for a quick meal and I've been asked for my "recipe" numerous times, its easy!

I also like Carrol Shelby's chicken chili mix.
