Soak your chili peppers in liquid (beef base works here) and let them rehydrate, then puree (stick blender). Fry meat, fry onions and garlic. Add cumin work in and then add chili puree. Add stock, salt, pepper, cayenne, paprika, chocolate. Adjust seasonings to taste. Eventually add masa to thicken.

Try adding leftover chopped up smoked brisket in addition to your regular meat. We freeze the leftover brisket all spring, summer, and fall specifically for use in chili. The smoke adds another layer of flavor. It’s that’a what chili is all about.

Buy a quart of chili powder in spice section or Costco and make chili for 2 years.

I am reading this thread thinking why the hell would anyone put a chocolate bar in chili.

It’s a complimentary flavor.
If you understand the pairing of lime and tequila, this concept isn’t much different.
Here’s another complimentary flavor to consider - coffee. Add some instant coffee. Maybe 1-2 Tbs.

Not trying to hijack, but I made a bison chili yesterday while watching football with Guinness. Delicious!
Ground bison
Sauteed onion and jalapeno
1 Guinness
1/2 can beef broth
Can diced tomatoes
Tomato paste
Tomato sauce
Spice mixture inclusive of: chili power, paprika, cumin, cayenne, oregano, brown sugar, garlic power, s&p

I’ve always made chili with the 2 alarm kit but last weekend I tried to make it from scratch. It was the best chili I’ve ever had.

Ingredients
5 slices hardwood smoked bacon
1 red bell pepper, finely chopped
1 green bell pepper, finely chopped
1/2 cup (~2 stalks) celery, finely chopped
1 cup (~1 small) yellow onion finely chopped
1-2 small jalapeno peppers, optional* seeds removed and finely diced
2 cans (15 ounces EACH) chili (pinto) beans in medium sauce
1 can (15 ounces) chili (pinto or kidney) beans in mild sauce
2 cans (28 ounces EACH) petite diced tomatoes, undrained
1 can (6 ounces) tomato paste
2 pounds (32 ounces) ground beef chuck
1 pound (16 ounces) Italian sausage
Seasonings
4 tablespoons chili powder
1 tablespoon dried oregano
2 teaspoons cumin
1 teaspoon dried basil
1 teaspoon seasoned salt & 3/4 teaspoon pepper
1 teaspoon cayenne pepper
1 teaspoon paprika
1 tablespoon white sugar
1 tablespoon Worcestershire sauce
1 tablespoon minced garlic
3 regular sized beef bouillon cubes
Optional: fresh cilantro, sour cream, freshly grated sharp cheddar cheese

Use cubed brisket, not ground meat
Dont use any beans or filler
Add 1oz of baking chocolate per 5lbs of meat
Add beer for any straight liquid you add
Use coriander
That's my advice. Biggest are the first 2 - cubes meat not ground and no beans
