I've only ever had it by itself or on fritos. My wife always had it on rice so I tried it and it was ok. Then a buddy from work brought some one day with cornbread and I have to say it was pretty damn good.

If we were having chili we usually just ate chili. Dollop of sour cream and some grated cheddar. Maybe some green onions. Saltines were always around but I rarely used them. If we added to the meal it was usually with the addition of wieners and buns and all the accompaniments for chili dogs. I would usually eat 5.

We had it over rice growing up, but I now prefer Fritos.
The problem is that Fritos now cost about the same as caviar. It is insane.

About 15yrs ago a friend of a friend from the Many, La area cooked a chili for our group. When we went to serve ourselves I asked why the rice to the guy who cooked. He replied, “to stretch it.”
I’ve never seen it again but that time stuck with me.

The H-E-B brand corn chips are just as good IMO. The "lightly salted" ones taste like regular Fritos in terms of salt content. Frito pie is a thing for a reason, although it's better if you just leave the chips on top as opposed to mixing them in with the chili.

The first and only time I ever saw chili served with rice was at the cafeteria at La. Tech. I always attributed it to being a north Louisiana yankee thing.
Never seen it since, and will certainly never eat it again. Corn chips are fine with chili, but not necessary. I always like a little cheese on top, though.
Absolutely not a chili with beans type either.

Little Mexican lady at the market I’m in sell homemade tamales by the dozen.
I buy them and after steaming ladle chili over them or break a couple over the top of a bowl of my chili. I really like that way but probably the original Fritos would be the most used. Only seen rice a time or two but wouldn’t pass it up.
My mother always used oyster crackers and they are as high as Fritos now.

I've done them all and don't mind any of them. However, if I have the time and care, i'll do some seasoned mini-saltines. Delcious

Fritos and Texas chili only, no beans here.

I do this as well. Good stuff with a little shredded cheese on top.

Vermicelli Noodles.
It doesn't make sense until you try it.

Saltines or Fritos, fresh shredded cheese, maybe a little sour cream if we have some. I've used cheez-it crackers before when we didn't have saltines or cheese. It works. I've never tried rice, but I'll give it a shot. We go pretty heavy on the beans, so beans and rice would probably be good.
I usually cook it in a crockpot. Brown a couple pounds of ground beef, add two large cans of black beans, two cans of Rotel Fire Roasted, a couple packets of chili seasoning, and let it go all afternoon on low. Wife prefers the black beans over red.
One time I forgot to add the seasoning. Wasn't too bad, just bland, and I realized I never put that in there.
