Chicken Salad

I accidentally bought two big jars of Duke's mayonnaise so I needed a chicken salad, potato salad, or tuna salad recipe to help use some of the mayo.
I watched about 20 YouTube video on chicken sald with the goal of making it better than Calvin's.
I poached 4 chicken breasts and mixed it with a half a cup or mayo and a half a cup of sour cream. 2 celery stalks, 1/4 cup parsley, 3 green onions, seasoning salt, pepper, garlic powder, and 2 tbsp of granulated chicken bouillon.
It came out great.
Considered putting ranch dressing powder, boiled eggs, and slivered almonds.
All I can say is Calvin's can keep their over priced chicken salad...mine was on point.

Recipe sounds good; I'll have to give it a try next time I make chicken salad.

When I first saw Duke's I got excited and bought a jar.
About 2 weeks later I saw Duke's again...got excited and bought a jar.
I forgot I had already bought a jar so when I got home I had 2 jars of Duke's mayonnaise :)
And I was sober.

Better than Calvins? I guess you know you are now on Calvins hit list. If they can get to you, you will become ground meat special this week.
You need to go make sure the front and back doors are locked Mate.

Looks like a great combo of ingredients.
Here a few things I like to add to the usual Mayo etc - lemon juice, Dijon, paprika, fine diced white onions and chives.
Lemon juice is a difference maker imo.

2 tablespoons dijon mustard

I use smoked chicken for the salad. Add diced apples and roast walnut pieces. Delicious combination of flavors

I’m not sure where the recipe came from, but my family’s chicken salad recipe uses cream cheese instead of Mayo.

I see sour cream is an ingredient. Greek yogurt also works very well as a mayo substitute. Both help cut the fattiness of using all mayo.
Lately I haven't been a fan of Mathernes chicken salad. It's bland and has an off sweet taste. I'll still pick it up sometimes for an easy lunch. But I usually have to doctor it up before eating.

Look up Brenda Gandt's video on pimento cheese on Facebook. It's pretty standard, but she uses part pimentos and part roasted red bell pepper. I think that sounds like a good flavor profile. Otherwise, I prefer the old fashioned pimento cheeses without a lot of bells and whistles. Jalapenos are okay, but I think I'd let folks add that as a garnish along with bacon if they want it.
Some folks put Lea & Perrins in theirs, but I'm not sure if I'd like that though I love the stuff. I might try some in a small batch on the side.

I've mostly started using mayo, Zatarain's creole mustard, lemon and white wine vinegar for all these.
Smoked chicken for CS
Crawfish boil potatoes for PS
