Nor Joe's has the olive salad recipe from the old Progress Market which was the neighbor of Central Grocery. The two places made sandwiches that were practically identical except for the olive salads. I'm not sure whether Nor Joe's uses the same bakery as Central Grocery because I don't get down to N.O. as much as I used to, but I still prefer the olive salad on their sandwiches.

nor joe's bread is too bready IMO...central's bread is by far the best and makes the sandwich in many ways

If you can get one where the meat is just sweating from the heat and the fat breaks down a little its amazing. I hate them served cold.

I often pick them up at 9 or 10 am...no line...then let them sit until dinner...the oil has penetrated the bread by then and the cheese is melted ever so slightly.

I have put them in an oven heated to 250 degrees and then turned off for 30 min. Throw in a pan of a little water and you basically simulate a hot shitty summer day in NOLA for your sandwhich.

agreed. the little beads of oil/sweat/fat on any italian meat is key.

the sandwich was definitely worth the 20-30 minute wait, but having one of the dipshits behind the counter refuse to wait on us at all, andn the other practically accuse us of bypassing the entire line (total bullshite), makes me seriously doubt i'd ever go back.
