How many people have tried it? I bought some from Hebert's this weekend and tried it. It was quite mushy and had a different flavor. Maybe it would firm up if I put it on the grill.

T-Boy's is more on the firm side, more so than the regular. It also has an unusual taste, slightly vinegar. I'm not crazy about it and would pass on it, if it was the only boudin available.

Yeah cauliflower along with cabbage are two things that I enjoy eating way more than I enjoy smelling.

I had some from T boys in Mamou, wasn’t that bad.
butcher explained it was made as a “low carb” version of boudin
To me it had a lil too much meat (pork and pork liver) in place of the rice
but over all flavor was all right
At least their attempt at it haven’t tried it again

If the Dr said ya gotta go ultra low carb you are dying fat arse, I’d eat it again
And Rouge knows fricking nothing about boudin.

I got some from Ronnie's one time. It's not bad, but the texture is a little off, and the cauliflower doesn't absorb the water and salt like rice does. That led to it to tasting a little oversalted and had a bit of a watery texture. If I was on Keto, it wouldn't be a bad substitute for the real thing, but I definitely would never prefer cauliflower over rice-based boudin.
