Breakfast Tacos .. a Survey

Should they be:
1. Egg tacos, with a bit of meat thrown in for flavor?
2. Meat tacos, with just enough egg to know it’s there?
3. An even mix of meat and egg?
4. Some other heathen combination?

While not my absolute favorite, an egg/sausage/potato breakfast taco is nothing to look down upon.

#5 - Whatever leftovers I have in the fridge mixed with eggs and put on a tortilla with green sauce. Such as this morning, it was palak paneer.

Best breakfast taco I’ve ever had was very simple from a food truck called Moon Doggies somewhere in Colorado.
Crispy tortilla, eggs, two pieces of bacon, kick arse salsa.
Ate them every morning for a week.

I do not eat breakfast tacos. The best tacos are asada straight from the grill, shredded, with ample cilantro and 1/8 of a lime wedge’s juice freshly squeezed over it. A homemade corn tortilla is also part of the package. I do not think egg has any part in a good taco.

At what point do they become breakfast burritos? I would assume when a full wrapping of the tortilla takes place. But this doesn’t jive with some places, like Bucees, who do full wraps on their breakfast “tacos”.

A weird requirement I have. I do not like when the meat and egg are cooked together.

Jones used to live in Galveston and they had this hole in the wall place that stayed packed called Bronco Burrito. Burritos the size of your head and the green sauce on the side was extra spicy. Good stuff.

When we lived in Texas, I always had to specify no potatoes because every place we ever got them from automatically threw them in as a filler. Bacon, eggs, salsa only for me please.
And to a later post, yes, in Texas breakfast tacos are actually burritos, made with large flour tortillas.
