I’m a simple man. My lazy breakfast taco is as follows:

Conecuh link butterflied and cooked in pan. Place American cheese on tortilla (yeah I said it American) crack an egg in the pan with the conecuh grease and cook until just a little runny. Put egg on top of conecuh and top with a little tiger sauce.

When I make mine, I eat about 1 egg and 1 piece of bacon per, then cheese and hot sauce. Any meat will work but bacon is tried and true

I sometimes take boudin out the casing then fry it up almost like a hash, put it in a flour tortilla with scrambled eggs and hot sauce. It gets things going especially on gamedays with early kickoff times.

soft flour tortilla, ground sausage, crumbled bacon, scrambled eggs, sauteed peppers and onion, a little shredded cheddar cheese, wrapped up like a burrito and grilled

a little cholula on the side

I used to pick up a Mexican friend for work everyday and his wife would make us breakfast to go before work. She made her own tortillas every day.

She put these breakfast tacos/burritos in a ziploc bag and that was usually the highlight of my day.

One pound of Delia's barbacoa and a dozen fresh corn tortillas with fresh chopped onions and cilantro ...you can get this in Pharr, Tx! Best lil breakfast tacos...also great chorizo and egg tacos!

Guess it depends on how I'm feeling.

If I'm bright eyed and bushy tailed...I'd probably go for something with more egg...machado or huevos a la Mexicana.

If I'm hungover...I'm getting a bowl of menudo with a barbacoa, carne guisada or chicharron taco on the side. frick an egg.

If I have potatoes I typically throw everything into a hash and put that into the tortilla.

Normally, even portions 1-2 eggs, 2 strips of extra crispy bacon, cheddar, sour cream, and a dab of salsa. All in a freshly cook tortilla. (after getting the raw tortillas from the refrigerated section it's hard to go back)
