A friend of mine asked if I had ever heard of putting a single Boiled egg in the shell in a pot of gumbo. He was mainly wanting to know if there was a reason.

You can boil it if you want in the gumbo.

But the way we do that is crack the egg and drop its contents in the shrimp stew and it cooks in the stew, and you could do that in a gumbo as well.

You said “a single boiled egg”. You mean someone out there is putting one egg in the gumbo? If so, there’s absolutely no viable reason.

Boiled or poached eggs in gumbo, stews, and red gravy more than likely came about by families trying to stretch their meat/protein.

I grew up with a couple of boiled eggs in my grandmother’s red gravy and she only did it because her momma did it.

I also love a poached egg in a red bean gumbo and feel that the poached egg is part of the recipe.

Yep, probably because my Great Grandparents grew them
I’m not a fan of the eggs but still do potatoes

A great example of the older generation using what was available and how traditions and recipes come about.

I’ve had gumbo with boiled eggs but they were boiled beforehand and peeled and the yolk removed. It was just the boiled egg whites. I liked it but it added nothing in the way of flavor, was just something else to bulk up the gumbo.

Me too Baw! The guy asked a question and I answered it.

However, my grandma cracked a couple of eggs in her shrimp stew and did not stir it, so it cooked together and when taken out with that yoke just cooked and a bit on the runny side, paired with that roux fricassee is dam good. Its not egg drop soup, and there was plenty of shrimp in that stew. They did it just out of habit from their mom I guess.

Whole peeled hard-boiled eggs in a red gravy! My kids won’t have it any other way

same. We always cracked and dropped 6ish eggs in seafood stews. Dont stir it for 5-6 minutes while it boils/poaches. delicious treat

Yep crack them in the gravy to poach. No real reason to put them in boiled and in the shell. I also drop some eggs in a crawfish boil pot after the bugs are dun.

I've gotten to where I crack a couple eggs in just about any simmering pot of liquidy I have cooking. Last night was a pot of ham and potato soup. Made for some fine poached eggs
