Best way to get your crawfish spicy when boiling them?

I have a friend wanting to know. He has been told to let them sit in cold water with the seasoning. What do the experts here say?

You sprinkle the seasoning on them afterwards.

The cook controls “spicy” flavor based on the amount of seasoning ingredients added to the water during the boiling, and soaking process

It’s not rocket science, just do NOT over boil the crawfish. You can soak as long as you want; times range from 15-45 minutes

It really is pretty simple. Getting them hot ain’t hard. Cayenne will do it.

I'm new to this site, but judging by the responses so far, is it safe to assume this thread has been done to death.

Suffice it to say, everybody has their own way of boiling seafood, just like people have their "favorite" gumbo recipe and swear by it.

Think I'll just keep an eye on this one to see where it's headed.

I get a tiny syringe and I fill it with a mixture of hot sauce, siracha, cayenne pepper, and chili powder and inject it down the throat of every live crawfish before throwing them in the boil. They taste amazing and you should try it.

Also, sprinkle lots of Tony’s on the shells after taking them out of the boil for that authentic ‘Lafayette-style’ taste.

I peel all my crawfish before I cook them. Make sure you rinse all the nasty fat and de-vein them at the same time. It makes a wonderful world of difference!

Purge them in cayenne and salt. The salt will make them poop out all the gross stuff and the cayenne gives you heat.

Boil in mildly seasoned water then throw them in an ice chest with powder boil. They'll be real clean and spicy.

I buy them live pre-seasoned and extra spicy. Saves time.

Most people use too much water. Use less than half your pot. That helps.

In addition to your regular boil stuff, add one small jar of jalapeño rings with juice. That makes them really spicy.
