I’m familiar with the ownership as the gentleman I know was approached to help finance the deal as a silent partner/investor. His professional career earnings are over $100,000,000 and he’s made very wise prior investments.

That doesn't really look like boudin. I don't know, I think boudin stand on its own- I just need a link of boudin, maybe a cold beer. Cheese and bread don't go with boudin, seems sacrilegious. Mass produced boudin is also often not so good.

You are right on so many levels, but let's dissect this for a minute.
I get it, however the deliciousness of pepperjack cheese boudin balls changed our thinking on this.
Agree. Boudin king cake and boudin pizza are a no-go for me. Boudin SHOULD stand on it's own.

Holy crap. Interesting.
A while back, met the dude who maybe manages the location. He lives in Katy area now with his family, but originally from Louisiana and played golf on scholarship at USL.
Cool story bro: A while back went up there on an emergency Evangeline Maid bread run, as we were completely out of it at the house. There were none on the store shelves, so I asked a girl working behind the counter if maybe they had some in the back and just hadn’t restocked yet. She came back and said all they had were two loaves that were in the freezer. I told her I’d buy those from her. She said she’d have to ask her manager if she could sell me frozen bread. I laughed and told her that I’ll gladly accept them for free, but I’d also pay her regular price for them.
Apparently she didn’t know that frozen bread could still be good. She thought I was crazy. I walked out with those two loaves.

put it on a cracker
put it in between bread
put it on the grill and make it into a patty of some sort
it's delicious either way

Done that at the camp plenty of times for breakfast. Put it on a biscuit with a medium fried egg. Add a bowl of hoghead cheese grits and you'll skip lunch that day.
