I got a wedding on Friday and spending the night in Lafayette, probably not getting back home til around noonish. I'm supposed to host a few people for the Bama game and really have no idea what to make with such little prep time. What's some of the best options I can make in around an hour-ish?

ETA: forgot to mention people are staying with us until the wedding, so don't have time for advance prep work either

Just pick some shite up - much easier than running around like crazy for 2 hours before the game.

Make a pot of gumbo or red beans tomorrow. Heat up on Saturday when you get back.

Or

Fry a ton of wings.

This is what I was going to suggest or a big pot of chili.

Wings are easy, easy. Hit them up good with a barbecue rub or Tony's or whatever your favorite seasoning is and let them hang out in the fridge for a couple of hours. You cook them in an oven for 20-30 minutes, till they get nice and golden, then toss em with warmed up butter and hot sauce. If you really want to go the extra mile, smoke em for an hour or so before cooking.

Swing by billy’s and get some party platters of boudin and boudin balls plus maybe some stuffed meats for the grill

We are on a kick with Cajun specialty stores. Hebert's on Jefferson has tons of stuff that's prepped and just goes into the oven. Stuffed chicken a million different ways, boudin, pans of cornbread dressing and broccoli/cheese rice, etc.

They have entree items and apps like stuffed mushrooms or peppers.

That's what I'd do, and also maybe ask the people coming over to bring something.

Do what LL suggested and run by Hebert's this week and pick up what you need.

You could also run by Calvin's and pick up some chicken salad to serve with crackers or call them now and order a chicken salad sandwich platter.

I have a similar issue. I've got various types of stuffed mushrooms and smoked boudin from Kartchner's. I have better cheddar and some crawfish bisque from Langensteins for a cup of soup. I'm trying to get some meat pies in puff pastry made and will have a dip or two. I can't recall what else is in the freezer right now that I collected for this game, but there will be plenty of food. I may get a couple of muffalattas to slice up.

The better cheddar freezes well? That stuff is like crack it’s so good.

Also, easy suggestion is get a bunch of the Kirkland frozen dogs and burgers and just throw them on the pit. It’s a very easy meal and should please everyone. Requires almost 0 prep work.

Pot of chili

Brown the meat/onions, add seasoning and a few beers, beans optional, and let it simmer. Serve with Fritos, cheese and sour cream.

You could get a pack of the garlic pepper chicken wings and throw them on the grill in time for the game

Big arse container of jalapeño Palmetto Cheese and some club crackers. I usually hate store bought pimento cheese but Palmetto is pretty solid IMO

That's what I've settled on! Only takes a few good minutes to get set up.
