Best pancake mix

Cooking for a large group and would like recs on a good mix. Got to be something better than the standard brands Also any twist on pancake recipes would be appreciated

Ditto on the Aunt. Don't get the one that you add water. Make sure you get the one that you add milk and eggs. One is like an instant and the other one is not.

As far as twists go, any canned fruits will work in pancakes. Just decrease the liquid that whatever mix you choose advises (can of peach slices = same volume milk/water for example). Peel, core, a couple apples and liquefy in blender for apple pancakes, again, reduce liquid for same volume of this "applesauce".
Can also buy some bananas and slice up to put in the mix. Or coconut (may need to add a little liquid for the dry flake kind, even pre-soak night before in milk/water).
Chopped pecans, walnuts, almond slivers.
Keep some cinnamon and nutmeg to add to these variations too.

I have always been a big fan of adding lemon extract to pancake mix. It makes them taste very light and fresh.

Add cardamom to your pancake mix. Adds a great flavor.

The Kodiak cakes mixed 50/50 with whole wheat pancake mix is really good, imparts a nutty flavor to the pancakes. I use buttermilk instead of water.
