Best Italian Sausage in LA

Who sells the best Italian sausage in the state? Closer to NOLA is better. Being able to buy in bulk is preferred. Open to both mild and spicy suggestions. Trying to do some research. TIA

Terranova's on Esplanade. Call before you go if you want it in bulk.

I keep reading that it's good. I need to go check it out. Was using Marciante's (Kenner) but they are now going out of business. Sucks.

No shite? That's some of the best you can get in other regular grocery stores around New Orleans. That sucks.
Terranova's is a bit better to me, though, but you got to get it there and only one guy is making it (as far as I can tell) in limited daily batches.

I've found too much inconsistency between stores and that is why I've taken to making all my own sausages.
Like already mentioned, Teranova's is a good option and I've found Rouses to be pretty consistent with their Italian Sausage, but way off at times with their hot sausage.
I like my Italian to have a nice bit of Anise flavor to it and some stores just don't add enough for my liking.
Italian sausage is the only one I make that I don't case up and leave it loose and stored in vacuum sealed bags.

I got two 10 lb. pork butts on sale for $.99 a lb. from Winn-Dixie last weekend and after trimming them up, removing bone and sinew, I wound up with 16 lbs. of meat.
I ground it up in even batches and made 8 lbs. each of hot and green onion sausage for my freezer.
Next time they go on sale, I'll get at least 4 of them to make more Italian, Andouille and boudin.

Terranova’s is fantastic. I would also recommend Zuppardos (Grocery in Metairie) fresh Italian sausage. Really, really good as well

My childhood for Italian sausage was Teranovas and Zuppardo’s. The butcher At Zuppardo’s ended up opening Pete Giovinco’s Deer Depot. After he closed, I spoke to pete for an Italian sausage recipe. I have since modified and comfortable making it myself.
