Brisket is probably my favorite meat, so probably Texas, followed by Memphis dry ribs but those are easy to do anywhere and seem to be much better done outside of Memphis.
KC seems to be the all around champ.
For sauce, I like a tomato based sweet hot sauce, that doesn't seem to be regional.

Nothing really worth noting, Famous Dave’s can compete in this town.
I think there a few decent pork butt places, but I’m not the best to rank those because I usually don’t get pork butt.
Sadly the best commercial brisket I have had here was done by someone my local Food City brought in to smoke some meat out front of the store to promote the sale they had going on BBQ meat.

Brisket and beef in general: Texas
Pork, whole hog: Coastal Carolinas
Pork, pulled: Middle South Carolina with Mustard BBQ Sauce
Chicken: North Alabama with Alabama White Sauce
Ribs: Best I've had at a restaurant was in KC. But I usually smoke my own babybacks that blow anything else I've had out of the water. I use a spicy KC style sauce on them though after smoking with a dry rub.

I agree with this. The best ribs I've had came out of KC (multiple places) by a long shot and the best brisket has come out of central TX.

Personally, I prefer pork over beef but do like to try brisket when in TX. Can’t beat a pulled pork sandwich with a vinegar sauce and slaw

And Texas don't need no sauce to compensate for the inability to smoke meat well.
FTR, Houston area BBQ has up'd its game incredibly the past 5 years or so. No need to drive to Austin, Lockhart, Hill Country, etc.

Which city/region of N. Carolina will you be visiting?
Lexington style ( western N.C.) bbq is different from what you will find ‘down east’.
Scott’s bbq in Hemingway SC is the top of my list but it is not mustard based. Chicken & pork.
Salt Lick which is near Austin is a close 2nd. Brisket & sausage.
Best ribs were at Hog Heaven in Nashville.
Unless you like vinegar a lot you will probably not like eastern NC bbq. It took me a while to like it. It is the go to meal for low key business lunches so I eventually got to where I liked it.

Texas brisket is among the greatest things on earth when done just right. I think I'd prefer it over a prime ribeye steak.
The best BBQ restaurant I've ever tried was in St. Louis. It may have just been because I was half-delerious from the road and starving, but The Shaved Duck was just perfect. Smoked chicken wings, spicy dry rub rubs, st. louis style sweet ribs. One of my favorite meals.

Haven't had Kansas City's but I prefer Texas brisket. I went all over the State of NC tasting barbecue along the "NC BBQ Trail" and was underwhelmed. Places like Honey Monk, Lexington BBQ center, Bridges, Herb's, Stamey's, M&K and Stephenson's amongst others. While I like the vinegar sauce from the east and the thicker towards the west, I found all the pork lacking in smoke flavor. In fact, many tasted the same as if it was baked.
I'll have to hit SC next as I love their mustard sauce and make a version at home frequently.
I went to Bob Gibson's in Decatur, Al. and fond the chicken to be good, but not worth gong out of my way for again. They have all manner of 4-5 foot trophies in the restaurant for pork, but what they serve in their restaurant is an embarrassment. Bland and flavorless. Terrible.

The Carolinas have perfected the bbq spud. The vinegar mustard sauce is perfect for the potatoe stuffed with brisket or pulled pork

Tried Salt Lick in TX and found it mediocre at best. If that's TX bbq, yeah, way overrated. Bland sausage, relatively flavorless brisket except for the fat and bark, and decent pulled pork.
I've tried KC and Memphis, also, but would have to go with the various Carolina styles as my favorite. I'm a pig guy and no region can cook a pig like Carolina peeps. I try my best in my backyard, and do a pretty decent job, but those guys are the masters.
Also, Georgia bbq, for the most part, blows.

My experience there as well. I asked them what they were famous for and the waitress pointed to the trophies and said pulled pork. Had zero smoke flavor.
