Best BBQ?

What are you guy's opinion on the best area/style for BBQ. Several areas are known for their BBQ (TX, Kansas City, St. Louis, Memphis, Carolinas, etc.) and each has their different styles. My personal favorite is Kansas City, but I've never had BBQ in Carolina so I have no opinion on their style of BBQ. I've had BBQ pretty much everywhere else in the country and plan on visiting North Carolina next month and will give them a try.

I'm no BBQ expert but I take a few business trips a year to KC and always love their ears. Their BBQ is a bit no frills but well cooked.

I won't step in to the main argument, but if you drive through Arkansas on 40, stop in Devalls Bluff and get a few sandwiches hot from Craig's.

The best BBQ I have ever had is Skylight Inn in Ayden NC. Whole hog East Carolina style.

I just feel like Central TX BBQ just takes more skill to perfect. Pork is such a forgiving meat. To make great brisket, the margin for error is so small... you need to start with a great peice of meat and take it right to the edge, but not go over. If you leave a Pork butt on the pit for 45 mins too long, it’s still gonna be pretty good. Take a brisket 10 degrees too hot, and it’s gonna crumble into nothing.

I’ve had all the regional styles, and to me, when Central TX BBQ is done well, there’s nothing like it.

A Texas-style beef rib done correctly is BBQ perfection, IMO.

Memphis is easily the most overrated of the bunch. The Carolinas actually have 3 different styles: Western NC (tomato-based), Eastern NC (vinegar-based), and SC (mustard-based).

My preferences are Texas, Eastern Carolina, and SC.

I used to think the same until I had good Kansas City BBQ. Texas BBQ is what made me fall in love with BBQ. Texas BBQ (IMO) is just behind KC by the smallest of margins as my favorite.

After experiencing Truth BBQ's beef rib a couple weeks ago, I totally agree with this statement.

But isn't KC BBQ heavier on the sauce? I've found that I tend to prefer my BBQ not sauced prior to serving. As all the greats say, good BBQ shouldn't need sauce.

Very good. However, the best I've had came out of Tennessee.

I'm interested in trying this mutton-style of BBQ that Kentucky puts out.

Ehh. I enjoy some damn good brisket done properly, but other than that, Texas bbq is meh to me.

I just don't go crazy over the other offerings and I'd still prefer whole hog to brisket. I do enjoy how Texas typically doesn't douse their barbecue in sauce. Sauce should compliment barbecue (or cover up bad barbecue...)
