Beef Tongue

I saw some beef tongues in the meat cooler while I was in Sam’s today, so I figured I’d pick one up and mess around with it. From what I’ve been reading online, braising seems to be a pretty popular way to cook them. Do any of you have a recipe or some insight you could share? TIA.

Beef and pork tongue are popular in Yakiniku (Japanese BBQ)...they slice it super thin and then toss it onto an open flame for a minute or two. It's delicious. It's very flavorful and I've always found it to be pretty tender, but just like everything else, it's all about how you prepare it. Maybe you could try it like that?
Pork tongue is even better but it doesn't seem to be sold in the states.

Do it like the beef cheeks thread and make tacos. You have to take the skin off it after it’s cooked. You can boil it for a half hour, take the skin off and roast until medium then slice thin and make tongue sandwiches.

Make sure it “skinned”. Brown it & make a gravy with a lot of onions. I love beef tongue but pork tongue is not good IMO.

Makes a fine roast gravy. Get the skin off. Brown and braise it.

I’m not one to turn my nose up at anything, but eating tongue is not something I want to do.

Well I grew up eating stewed squirrels and stewed chicken gizzards so tongue is like PBJ to me.
And it really is one of those things that if cooked right and served to you without knowing you would be hard pressed to not eat it. Like a rich beef pot roast.

Back in the old days, when guys in the control rooms were still allowed to cook, I ate all of those goodies. Many a time we had smothered roasts with 4 legs and that was about all I knew about them. Had a guy that would bring in tongue from the family farm and cook it until tender, slice it super thin and we’d eat it on cathead biscuits. I’m drooling thinking about those meals.

Best I ever had was beef tongue pozole. All the skin had been taken off, and it was very tender.
Sadly, the restaurant owner had some problems that led to relocation. First time l ate at her restaurant was on Halloween, and she was prancing around in a skin tight devil's costume. I ordered seafood pozole, and not being familiar with all the sauces and sides that came with it, she literally spoon feed me that day.
Mexican food has never been the same after she went back home.

Trust me I have done a bunch of em and ate them growing up they used to be very cheap. The secret is to boil em hard until a fork can be stuck in and pulled out easily a two pronged kitchen fork is what I use. if it aint ready yet you stick the fork in and the tongue lifts up when ready it slides in and out easily. Then remove the tongue let it cool and it will peel very easily. Then do what you will with it.
