Beef cheek info

Where to get em and best way to cook em?

I've bought them at Sam's before.
I seasoned with a brisket rub, put on my pellet smoker for a few hours, then put them in a pan with a barbacoa braising liquid until they were easy to shred. They made awesome tacos and then chili. The tendon through the center just about dissolves and is pretty tasty.
ETA: Just remembered I got the recipe from MeatChurch. I smoked at 200 degrees. LINK
I'd post some pics but they looked like cow patties in a pan.

I've seen them at Sam's as well. And cook them just like Loup said. Real barbacoa is so damn good.

I hear there's a shite load of cleaning involved in using them. Smoking them is supposed to make ridiculously good tacos. Would love to try them one day.

The one time I cooked them, I got them at Sam’s. They made some good tacos (I also followed the Meat Church recipe), but they were just a little too fatty for my wife’s taste. As another poster stated, they did require a pretty good bit trimming.

That's his regular beef cheeks. Above posters were right, you do get a lot of scrap that has to be turned into some type of product. That's why most places do barbacoa. They are some beautiful pieces of meat, but make sure you have your knives sharpened.
Some places sell them pre-trimmed (Hassell Cattle Company), some don't. If you get the non-trimmed ones be sure you are using the actual cheek part and not the piece with the fat cap that can resemble a cheek.

Another part that makes good tacos is a beef heart. It takes some trimming to get it down to small strips. Then season with salt, pepper, cumin, and Tajin and cook in an air fryer. Add some tortillas, lime, cheese, avocado salsa, onion/cilantro.

Probably. I've done barbacoa with deer neck or shanks before. Might be good with something cheaper like chuck roast too

Watch the amount of salt you put on the cheeks, they are very sensitive to salt and it will draw a lot of the moisture out. I cook mine in a slow cooker and don't season till the last few minutes.

This recipe is from the original king of smoked beef cheeks.
Smoke with Salt. Pepper. & Post Oak, maintaining around 250 for 4 hrs, then confit in wagyu beef fat until pull apart tender (2 hr).
