Bad meal / dining experiences. Problems and solutions.

A guest of mine recently had a bad dining experience. Their main entree was not good. Basically, it was inedible because it was overcooked and crusty.
It was brought to our waiter's attention. Their solution? They boxed it up to go. Yes, to go. I stepped in and asked, "if he didn't enjoy his meal while it was hot and had to send it back, why would you think it would be better reheated at a later time and date?"
The check comes. The entree that my guest did not eat is still on the bill. When I asked about this, the waiter informed me, "there's nothing I can do.". "It's their policy.". I said, "Who is their and what is their policy?". Our waiter said it's the owners policy, it's not mine. I said but you represent your restaurant, so it is your policy. You work there, it is your policy as well. I understand why the waiter said that but nothing infuriates me more when an employee of a company uses the word "they, them or their."
I asked to speak to the owner or management. The waiter said, "they won't do anything about it.". I said, well let me talk to them and we will see about that.
Fast forward, the entree finally came off our bill.
Why does it have to be a song and dance? The waiter is at fault but quite frankly, I hold the ownership and management more at fault because "they" either have a training issue, aside from an execution issue and "they" don't empower their employees to fix it. Just fix it. Make it right.
Now I have a bad experience with this restaurant and because of the way it was handled to finally get a resolution, the likelihood of me wanting to go back, because of an off night, is zero because other restaurants that cook this same kind of cuisine can do it better and I don't have to go through and song and dance should an issue occur.

Have you never been into a restaurant? Practically zero restaurants/bars/stores/etc. give basic employees the power to comp shite for people.
The server probably shouldn't have said "they won't do anything about it", but otherwise.. this requires upper level interference at almost any establishment. Otherwise, employees would just be comping their friends left and right.
The dude is paid well below minimum wage by his employer. You really think he's going to take the fall for them? frick that. He's right. It is THEIR policy. And if I was him, I would have gotten "them" the minute a customer even came close to questioning company policies. Not worth even breathing an extra breath over. Pass it on to management.

Our waiter was reluctant, almost to the point of being defiant, to not bring management to help resolve our issue.
As a matter of fact, from what I could see, there was no management present.

So your friend couldn't even stand up for himself(herself) and needed you to interject. Then you went about it passive aggressively on a waiter who couldn't do anything without approval

He had to excuse himself. He had a little one to attend to. And since he was my guest, I had offer to pay for the meal.

There was nothing passive aggressive about my behavior. If my waiter could not fix my issue, either because this person did not want or did not the authority to do so, then bring someone into the mix that can. And since my waiter didn't offer this solution, I did. But again, my waiter was reluctant to ask for any help. All this person did was taking the item off of my bill. No manager or owner ever stopped off at my table. As a matter of fact, I don't even think they were notified, if they were even present.
An apology or acknowledgement of "we wish your dining experience would have been better with us" could have sufficed. But to not acknowledge any wrongdoing of their part left me with the impression that they simply do not care.

A. The server was defiant and should have had a manager visit your table in a situation that's out of his control.
B. The restaurant has horrible policies and no restaurant worth a damn should be operating without a manager or owner on duty. Perhaps Paula Deen was too ashamed to show her face.
C. Management failed you because I guarantee that someone was there, they just didn't want to be bothered with your legitimate complaint. If I cared at all about the restaurant I was managing, I'd certainly want to know about customer feedback, positive and negative.
D. Your food was inedible.
From what you've outlined, there's no chance in hell I'd be back.
So many good restaurants in Savannah and such little time.

Your OP implied the issue was that he didn’t claim the policy as his own, which would be silly. Refusing to get a manager is just weird though.

This is a bit trivial. You know what the waiter is meaning. They are an employee that is abiding by a policy set forth by the restaurant and its owner.

This could be a training issue, absolutely. There should always be a superior willing to speak with an unhappy patron.

You seem like a guy that reads a lot of self motivation books and does daily affirmations and all that cheesy shite. Some snot nose kid at probably a 2 star restaurant that you paid 12.99 for an entree at was an idiot. It'd piss me off too and i would have not paid for the meal out of principle and then not gone back. It's not that complicated, you didn't have to write an excerpt about your associate and blah blah this and that.

Incredible. Some places don't seem to realize that as a restaurant they are selling atmosphere and service every bit as much as food & drink.
If I owned a restaurant, this behavior would be grounds for immediate termination.

The server handled it about as poorly as he/she could, but I think you're being too hard on the server. Sounds to me like the restaurant has really shitty training, so you should direct that anger at the ownership/management.

I think he means that he is at fault for putting no effort into making the customer whole, not for the food being bad.
The waiter may have some motivation to keep the bad entree on the bill so he gets tipped the full amount of the bill, but that wouldn't make much sense because a disgruntled customer is likely to tip less...but waiters are dumb. He should have done the right thing from the start.
FWIW I've never sent anything back in my adult life...I did one time as a high school kid when I got some crawfish etoufee in NOLA that was AWFUL. It tasted sour and was literally inedible. Since then, I've never had anything bad enough to send back. I've had lackluster meals for sure, but I'm not going to send something back for that. It either has to be REALLY bad or not what I ordered (steak overcooked for example).

experiences like this are the only times I write a negative review on a place. I can forgive food missing the mark or a bad waiter...but something that mismanaged is unforgivable. You should never have to ASK to see a manager in those situations.

If you're not giving them the "power" to do this, then you shouldn't give them the power to handle a disgruntled/unhappy customer's issue.

Exactly. He should have passed it on and wiped his hands of it. Possibly the only plus to being low level is being able to hand over shitty situations for someone else to deal with.
