Thanks for the sauces. Do you warm those when making them or put them on the smoker at all?

Unless you are cooking in a competition, flash fry it.
It's pretty common in restaurants actually.

Agreed.
I didn’t know anything about the guy before this thread but this guy is a douche sandwich, covered in shite, and smothered in burnt hair.
I would stay away from any restaurant he was involved with, no matter the quality of the food.
I’ve gathered his social media habits are part of the reason that he’s lost jobs in the past and if this thread is any indication, they will be a reason he loses jobs in the future.

We talking about our resident Ohio poster, yes?

I asked for advice on cooking with my electric smoker and he told me to sell it and get a real smoker.
I dont know many people who call themselves a chef who would do that.

If the douchebag “chef” moved to Ohio then yes.

I did not know anything about this guy before either and I think he has been great! Everyone has a personality that you will like or not like. If you do not like it don’t click on his thread. Personally he has been informative, helpful, sarcastic and funny. So, if you don’t understand his personality or like it don’t read it.
I look forward in trying his future whatever now that he has been open on this forum when asking questions.
He has been more than open and helpful.
No need to be PC he is just edgy.

I had just come from living in Chicago and went to a couple places on a regular basis up there.
What were your usual haunts? I'm a big fan of Green St, Smoke Daddy, and Chicago Q if I'm classing it up a bit. Smoque and Lillie's Q are also very good.

I'll have to rattled my brain and get back to you on the names. I have my timeline wrong. I moved back prior to that and for some reason thought Rob opened up after Katrina. Looking back, it was later than that.

So, do you sill do Bonsai? Not much of a Buddist, but I unfortunately am an old guy who does Bonsai. IMO it is a young man's passion, because I will be dead before most of my bonsai are mature and neither son cares for the hobby.
You need another son? I’m up for adoption
