Art of the hamburger - It's also for supper

I am enjoying reading the opinions about the preferred "perfect" hotdog. It might be fun to also do hamburgers, so what do you like? what is best. Give us your idea.
Here are a couple of ideas.
To me, this is the old fashioned, white bread bun, mustard/mayo mix, iceburg lettuce, sliced tomato, dill pickle chip (round sliced) variety. When I was growing up, we pretty much always had buns, but a few times, mom would serve them on white bread. In those days, sesame seeded buns were rare (special). For a long time, the condiment was only yellow mustard, then when I went to work at Frostop, we learned about fancy mustard mayo mix and everyone liked it, so we switched to that.
At the moment I am not eating bread of any kind, but I hope that will not last forever. These days, we eat them Keto style, like this one, made with guacamole. The best burger I can remember eating was at a mom and pop place in Napa valley. It was a lot like the first photo, except with avocado slices added.
Here is another keto bunless burger. I understand if you think it is not a burger, but it is the best I can do right now. It has bacon and cheese, because everything goes better with bacon and cheese. That looks like a keto bread, tucked into the top. Keto bread is a long way from bread, but...

I make my patties wide and thin. I find when I grill or griddle them they come together at a perfect size this way.
I dont season until the patties are formed (before cooking), and even then I only do kosher salt, cracked black pepper and the slightest bit of granulated garlic
I grill to medium, will put cheese on while still on the grill to melt
Use evangeline made buns. Will put them on the grill to toast them and then butter them afterwards. Then I'll add mayo and mustard, raw onions, sometimes a pickle or tomato.
If I remember to make some bacon on the stove, I'll add that as well.
Usually I use cheddar cheese or american cheese, but sometimes I'll use blue cheese and melt that on the burger before pulling it.
Thanks alot, I'm also trying not to eat carbs, but now I want a burger.

Season the burger with salt, pepper, and sometimes a bit of Worcestershire, all after being formed. When I flip the burger I put cheese on it and a bowl over it to steam the cheese.
For a "burger sauce" I use mayo, a bit of pressed garlic, and a bit of sriracha. I also thin some pepper jelly with a bit of water and melt it down. Sometimes I use both, sometimes I go with either/or.
For "toppings" I chop up an onion and a jalapeno and grill them.

I go with a touch of worcestershire & season salt. Grill, only flipping once juices pool, and only flipping once. Pepper jack cheese on, shut down the Egg and 90 seconds cheese in melted perfectly.
I dress with Sriracha & mayo blend on top bun, straight Sriracha on bottom bun and sliced pickled jalapenos.

Those pictures look amazing.
On a related note: I watched an episode of "The Chef Show" on Netflix, and they recreated "The Late Night Burger"
In it, they took 5lbs of ground chuck, and mixed it with 5lbs of ground brisket to make their patties.
Chef Roy says it's because the Chuck can shrink and make it too fatty, the brisket adds the leanness to give it it's shape.
I always use chuck because I found the opposite to be true, the leaner the meat, the more likely the burger will turn into a ball. What's the best meat?

I'm all about smash burgers on the flat top griddle

Agree on the smashburger. I need to invest in a good smasher though. I’m still doing the plate and dumbell technique from college when ground beef was a treat.
Worcestershire, s&p. Pretty basic. Usually make a sunny side up egg and a couple pieces of bacon with cheddar or Pepperjack cheese and a little mustard. I don’t like bread so gotta add some layers to make it enough for a meal

Depends on how I'm cooking them in how I prepare them.
Most of the time it is on the grill, so I make about a half dozen wide patties with 2 lbs of ground beef. Season them with kosher sea salt and fresh cracked black pepper. Once the sausage appetizer comes off the grill, and the kids are eating their hot dogs, then I put the burgers on. Hot grill, maybe 375-400, and put them all on and put the lid on. Let it go a few minutes, flip once, and let them finish. Fresh sliced colby jack on top and put a metal bowl over so it melts fast and even. Lettuce, tomato (preferably from the garden in the summer), and let everyone use what condiments they want. I like a tiny bit of mayo, yellow mustard, and a little ketchup, all mixed together.
If I'm cooking inside on the cast iron, I try to do smash burgers. My largest skillet I can fit 3 in there, but I also have a larger griddle where I can cook all of them at once. I just have to put it in the oven to get it hot all over, then on to the largest eye on my stove to keep it hot. Sometimes we'll go sliders if we're cooking them inside.

My #1 is on brioche with a slather of Mayo, pickles, onion, lettuce. Bun toasted in the cast iron.
Recently tried them on English muffins and made a light version of Big Mac sauce. Pretty delish.
And a bunless burger isn’t too bad either. I like Big Mac sauce, mustard, and ketchup on these kind.
Always make my patties thin and charred, salt them just before they hit the hot pan. I like American cheese best, but also enjoy a blue cheese burger from time to time.
Sometimes I crave a BBQ sauce style burger with fried onion strings, but most just order that out.

I'll eat burgers a hundred different ways but standard for me is a brioche or potato bun, lettuce, mustard, mayo and tomato.
I'll eat one with grilled onions too but I don't care for the texture of raw onions.

Double patties cooked on a flat top, mayo, mustard, house made pickles, grilled onions, with American cheese.

I got a cast iron griddle for my grill last year and started doing smash burgers and will never do burgers another way.
80/20 ground beef, rolled into 1/6 LB balls, thrown on ripping hot griddle, smash as thin as possible salt and pepper, let a crust form, flip, put on cheese and pull when the cheese is melted. 3-4 minutes tops.

Eh I don't think you need to invest in a smasher even though they are cheap. I just take two spatulas, put them on top of each other crossed, and press down hard.

as long as the meat is thin. i don't want any meatball on a bun. i'd rather two thin burgers than one giant meatball.

Haven't had a BBQ (sauced) burger in years they are what my dad really liked. He cooked them all the time (On the grill with BBQ sauce). So good.
