Been thinking about hamburger steak and brown onion gravy with mashed potatoes. Anyone have a good recipe for the hamburger and gravy, I can figure out the mashed potatoes
Doesn't even have to be your own recipe, just point me in the direction of a tried and true recipe.

I think of hamburger steak more in terms of technique than recipe
4 strips bacon, cut into 1/4”pieces, render fat, remove bacon from pan
1.5 lbs ground beef(80/20), formed 4 patties, season liberally with S&P
Brown the patties in the bacon grease.
Add one sliced onion, brown
(Might also consider sliced peppers and or sliced mushrooms at this point)
Dust in some flower and incorporate well
Add in some beef broth or stock
Add back patties and chopped bacon
Reduce gravy to desired consistency

Supposedly a Piccadilly copycat recipe.

Brown your hamburger patties in fat of your choosing. Pull them. Throw in sliced onions and start sauteeing. Add a few tablespoons of flour and stir for a few minutes. Add some beef stock and get it the consistency you want. Throw in some sliced mushrooms and Worcestershire. Let that go a little bit and add your patties back in let simmer.

I do it the easy way for nostalgia's sake. Reminds me of how my grandma made quick Sunday lunch after church.
Brown the patties well after seasoning with some tony's. Sautee onions. Add pouch gravy of choice. Add the patties back and cook down.
