Anybody have any good squirrel recipes?

Brothers are gonna go shoot some squirrels tomorrow. My dad used to make an amazing squirrel stew, but neither him or I can remember it.

Parboil cut up squirrels with some onion until tender...45 minutes or so.
Dip squirrel in seasoned flour,then milk and egg drench, then back in flour. Pan fry in1 inch of oil.
Pour off most oil, make a brown roux, thin with water or stock, add squirrels and simmer 20 minutes . Adjust salt, black and red pepper to taste.
Make biscuits.
Profit.

I asked some guys who do construction (back before Katrina) and they simply said "dark roux".

Smothered Squirrel in Tomato Gravy
Prep Time: 2 Hours
Yields: 6 Servings
Adapted from John Folse
Ingredients:
2 or 3 squirrels, dressed and cut up
salt and black pepper to taste
cayenne pepper to taste
granulated garlic to taste
Louisiana hot sauce to taste
1 cup flour
½ cup vegetable oil
1 can Rotel
1 small can tomato sauce
tomato paste
2 cups diced onions
1 cup diced celery
1 cup diced bell peppers
¼ cup chopped garlic
3 cups chicken stock
1 cup sliced green onions
bay leaf
Method:
In a large bowl, season squirrel with salt, peppers, granulated garlic and hot sauce. Dust squirrel with flour, shaking off excess, then set aside.
In a 5.5 quart cast iron dutch oven, heat oil over medium-high heat. Add squirrel and brown on all sides, turning often. Remove meat from skillet, set aside and keep warm.
In the same skillet, sauté onions, celery, bell peppers and chopped garlic for 3–5 minutes or until wilted.
Add a squirt of tomato paste and brown. Add a little flour and make light roux, to thicken.
Add can of Rotel and cook for about 3 more minutes.
Return squirrel to skillet and add stock. Bring to a boil then reduce to simmer. Add some green onions; save some for the end. Add bay leaf. Cover and cook at least 1½ hours or until squirrel is tender.
Continue to add water as necessary to retain volume. Add rest of green onions and adjust seasonings to taste using salt, pepper and granulated garlic. Serve hot over steamed white rice.

Here’s the best I’ve tried:
3 squirrels cut into quarters
3 cups of water
2 envelopes of Lipton soup mix
1 can of Campbell French onion soup
1 yellow onion diced
1 bell pepper diced
1 celery stalk diced
1 tsp cayenne pepper
1 tsp garlic salt
Put all ingredients into an 8 quart pot and bring to a boil, stirring occasionally for 2 hours. You will need to add another cup of water after the first hour of boiling. Serve over cooked rice, mashed potatoes or cooked pasta. Enjoy.

baked wrapped squirrel! Wrapped squirrel in thick applewood smoked bacon using toothpicks to keep bacon on da squirrel and cook on grill untill bacon is cooked well..crispy... but not burnt....remove toothpicks and bacon get the bacon and feed the squirrel to the buzzards....they got to eat too....

Spot on. We made a gravy and served it with rice, but it's the same concept.
