After fishing in AK, we got about 40 lbs of Halibut in the freezer now. I've never cooked it before , nor do i think I've eaten it before, and I'm just looking to get some recipe suggestions if any of you have tried one before and liked it.
TIA

I really hate you now.
Simply grilled it is my favorite fish. Steaky texture and clean finish. This is one dish that shines with simple sides and simple flavors. Don't try too hard with the prep and sides and all should be good. I prefer mine with a little lemon juice, grilled asparagus, and perhaps a celeriac salad. Capers don't hurt either.
ETA: a little dollop (not too much) of mashed potatoes goes quite nicely with it as well. Hardly ever recommend mash with a fish- but the Halibut shines with it.

The best way I've eaten halibut is smoked.
That's not to say there aren't better recipes. I just love it smoked.

Caught a small one in San Pablo Bay a couple of weeks ago. Made ceviche and fish tacos. Anything you can do with snapper you can do w halibut.

Halibut is my preferred fish for fish chowder.

...and Cioppino. I hope my monger has halibut every time I want to make this dish. It's a firmer fish which holds up nicely to soups and stews.

At the top of my favorite fish dish. Baked, roasted, sautéed or grilled with a lemon caper buerre blanc is delicious. Also good braised. Fennel is a great flavor with it.

Olive Oil Poached Halibut
¼ cup capers, rinsed
2 ½ lb (1-inch-thick) halibut fillets
1 ½ large lemons, thinly sliced crosswise
¼ cup fresh flat-leaf parsley
2 cups extra-virgin olive oil
Fresh lemon juice
Directions
1. Preheat oven to 250°F.
2. Chop half of capers and pat fish dry.
3. Sprinkle fish with 1 ½ teaspoons salt and ½ teaspoon pepper.
4. Let stand 10 minutes at room temperature.
5. Arrange half of lemon slices in 1 layer in an 8-inch square glass baking dish and arrange fish in 1 layer over lemon.
6. Top with all of capers, remaining lemon slices, and 3 tablespoons parsley, then pour oil over fish.
7. Bake in middle of oven, uncovered, until fish just flakes and is cooked through, about 1 to 1 ¼ hours.
Serve fish with some of lemon slices, capers, and oil spooned over. Sprinkle with remaining tablespoon parsley.

Envious - You're going to love the taste and flaky texture.
You have lots on hand, so try old fashioned English-style fish & chips, complete with hand cut fries.
There are a lot of recipes out there with and without beer batter.

Heavenly Halibut
This recipe is legit at least that's what my native gf says when I cook it for her when her Mom sends us Halibut
Serve over white rice and enjoy

I've had it at BR Prime in Biloxi and it is a top ten all-time favorite of mine.
