Any good poboy ideas/recipes?

I've been to Pops Poboys in Lafayette a couple of times now and really like the place and their interesting poboys. Has me wanting to make some different poboys at home. Anybody have any cool poboy ideas or recipes to make at home that aren't along the traditional line?

Make a chicken gumbo, heavy on the chicken and let it simmer until the chicken gets stringy.
Pile that chicken on poboy bread with the usual trimmings and eat it similar to a sloppy roast beef poboy.

I guess you could use rice noodles, slices of beef, cilantro, basil, bean sprouts, jalapenos and call it a pho-boy.

Fresh sliced seared tuna, Asian aioli, sliced tomatos, light Asian coleslaw.
Blackened speckled trout or redfish, smoked tomato tartar sauce, sliced tomato, pickles and shredded ice burg lettuce.
Boneless leg of lamb sliced thin and warmed, horseradish mayo or cucumber yogurt sauce, baby spinach, tomato, little bit of lamb au jus.
Thin marinated ribeye, chimichanga sauce, lettuce tomato, gruyere cheese.
