Up here in the mountains, don't want to bring any of this stuff home... And it's expected be in the low teens.

Currently, the idea is the oddest gumbo ever assembled.

But I have no filé or okra.

A bisque with some sweet corn added?

I'd do some sort of pasta dish. Saute the tasso and andouillie. Cook the chicken in the grease. Make some sort of crawfish cream sauce

if you have pasta and either milk or sour cream you have what you need

brown the pork products and chicken
sautée onion/celery/bell pepper/garlic
cook the pasta
mix the dairy and the fat from the crawfish tails into the veg and proteins, reduce to a medium thickness. Add the crawfish
toss the pasta in and enjoy

Make a gravy with the chicken and Tasso and the appetizer can be to heat up the crawfish in the bag and eat them like you would eat any boiled crawfish.

Gumbo or jambalaya and fry the crawfish tails for an appetizer.

Throw it all in a jambalaya. It’ll be just fine.

Toss crawfish in right before you put the lid on. Can probably do the same with the Tasso.
