Not sure I would trust a gas station sandwich shop to properly dry age meat for 60 days. Maybe that's just me?

Those appear to be high choice ribeyes. Not really wasting a good steak there. Matter of fact they’ll prob slap a nice markup on em and make some $$

Im a huge fan of their sandwiches, but im in the why waste a good steak camp.

So banh mi are required to be cheap, and no one can be creative or innovative with the format? Whatever. If you like the $3 kind, eat em. But don’t throw rocks at people who want to take them in different directions.

Innovation and variety are what makes food so interesting.
