Dude, great job! That looks so good!
I posted the other day about wanting to roast my heirlooms and serve them over freezing cold Greek yogurt while the tomatoes are piping hot. Glad to see something similar!

Stupid easy.
Mix Toms with whatever..oil herbs garlic…
Roast in oven.
Prep yogurt with lemon zest, garlic, pinch of salt. Cool.
Combine when ready.
Fresh Pita I think would be better than the sour dough I had, go figure.

Did a shredded pork belly today along with some homemade slaw. Will do the ribs and baked beans tomorrow.

My pork butt and brisket cooked a little quicker than I planned but they are now resting in the ice chest.
18# packer (pre-trim) turned to jelly in just over 8hrs on the KJ but I trimmed it down a lot and partially separated the flat/point to do burnt ends like meat church recommends.

Made a birria from beef ribs, smoked a chuck roast and made birria tacos with the renderings from the ribs over the smoked chuck.
