Noticed this yesterday while there and grabbed a 12ish lb. one for under $40. Is this the normal price? I’ll have to trim it a good bit, but I felt like I couldn’t pass one up at that price. I even asked one of the butchers if that was correct and he assured me it was. I think the last brisket I bought was choice from my local supermarket and it was almost $90 for 16ish lb.

Not sure on Costco but the HEB by me has them pretty consistently at that price, sometimes even a bit better, so wouldn't surprise me if Costco has them that price fairly regularly.

When you're done trimming it'll be about 6 lbs.

That sounds about right. I've bought them there before at that price. Maybe it's normally $4 a pound, but they put them on sale frequently, like around big cooking weekends. (I bought briskets at that price for LSU games in September)

Don't quote me but I believe their normal price is $3.29/lb, or atleast the 3 I've bought from them were always $3.29.lb. I remember being pumped about that price because before my Costco membership I was getting them at Rouses and their sale price was $3.99/lb.

It usually fluctuates between $3-3.49/lb. They are usually.about $0.50/lb cheaper than a local store for me, but I'm not sure the yield price per pound is any cheaper.

On 6/4/2018 I paid $3.59 a pound for a prime brisket from Costco. Weighed 18.50 pounds. Have picture of the label.

I've bought USDA Prime brisket for under $3 a lb. at Costco before, but that price is pretty much normal.

If I remember right, the cheapest was in the $2.79 a lb. area. Far too good a deal to pass up, even if needing trimming to pop in the smoker or to brine for corned beef and pastrami.

$3.29 to $3.99 is the usual price at the one in Baton Rouge cant beat that price. Especially when Albertsons and Winn Dixie are selling choice for twice that!

Alexander's always has Prime for $3.99/lb. Costco Primes always seem to have more fat than other places.

I went to Costco last Saturday only for pork belly. But every time I go to any grocery store I always check out the prices of briskets. I saw a 13 pound brisket for $37. I could not pass that up at all. Didn’t even want to cook brisket but that seemed like a steal.

Roberts has prime untrimmed for $3/lb as well. Must be the popular meat sale item this week.

Side question. When you buy an untrimmed brisket, what do you do with trimmings?

What I trim is the thick layer of fat and do so fairly aggressively depending on how I'm going to cook it. If smoking, I'll leave more of the fat cap on so it renders while smoking.

If I'm brining it to make corned beef or pastrami, I'll trim it a little close to the meat.

I just toss the fat for the most part since I don't really want to store rendered fat that can be used for lard.

I bought a choice at Albertsons for $1.67/lb once. It was great.

Do you trim off the entire flat?

I d not trim the fat ca before cooking. I heavily coat that in rub. About 30 minutes before done, I remove the cap entirely, redust with rub, and return to smoker again.

Dog eats the cap.
