Mexican food is different depending on the region of Mexico. Tex-Mex, real tex mex, like what you find in San Antonio and south texas is not “Americanized”. The only Americanized thing about it is the fact that it used ingredients that were native to the state of texas. If texas never declared independent from Mexico then tex mex would be just another regional variety of Mexican food
