A friend of mine swears by Pamelas Gluten free pancake mix. She uses it like regular flour.

I make my gumbo with a gluten free roux. The specific receipt calls for 3 Tbl spoons of almond flour and 3 Tbl spoons of coconut flour, plus 1/4 cup oil(bacon fat) can’t taste the difference

My brother has celiac and I have made a gluten free roux for a gumbo and it was fine. I think we used rice flour.

If she has Celiac it is a serious deal. But absent Celiac, I agree that it is bs. Especially something as limited as flour in a roux.
