My wife and one of my daughters have celiacs so I only cook gluten free. I will usually use a brown rice flour for my roux, and that tends to get the right color as well as the slightly nuttyness of a good dark roux. White rice flour doesnt usually get dark enough. I have also had good results with Namaste brand gluten free flour, but most of the flour mixes tend to be grainy when used.

People who claim they are allergic without Celiac are probably liars. That's not what people with claims of "intolerance" are saying. It's not like gluten is going to send them into anaphylactic shock, but it might make them feel like shite. It could also be that things that contain gluten also generally contain X which makes them feel like shite. At the end of the day, people trying to eat in a way that makes them feel better isn't the worst of things.

What measurement of brown rice flour do you use? Is it the same as if you were using all purpose flour?

Used it for the 1st time for our Christmas Seafood Gumbo and it's a game changer. Couldn't tell the difference and saved me 45 minutes.

I think my aunt does this to test my wife's allergy/intolerance (not diagnosed). I find it incredibly disrespectful that she would do that. I don't throw peanuts at her grandson to test his peanut allergy.

For all of you saying it's a fad, for a lot of people it is but after going through some contamination episodes with my wife, I don't think she's following the fad. It turns a good time to a bad time. Like Celltech said, leave that shite in the OT.
