Conecuh is some pretty decent stuff. I’ll through that in a crawfish boil.

I like the smaller links but haven’t seen it around here in a long time.

Pretty much any fresh sausage from Nunu's.

Kartchner's bacon and maple sausage is surprisingly good. I would have thought it'd have been too sweet, but it wasn't.

I generally prefer fresh sausage over smoked on the pit but if I'm buying smoked, that Conecuh Cajun is pretty damn good. Big Mike's jalapeno/cheese is too.

Fresh sausage? (local to me)

Bourgeois Garlic
Bourgeois fresh Pork
Cannata's Cajun Garlic is stupid good
Rouses Cajun Pepper jelly

The best fresh sausage I've ever had comes from a place in Cade, La. called Joyce Market. Start with their Churice (choo-deese). It's a course-grind pork sausage that's just phenomenal. Then...

Joyce Mrkt Bumble Bee sausage
Joyce Mrkt Honey Bee sausage

When I'm in that area, it usually costs my 80 bucks to get out that place.

Benoit's smoked sausage is the best I've found for jambalaya. It's smoky goodness spreads all through the pot.

This a pretty embarrassing statement from someone supposedly in “the industry”. Clown

I explained what green means. Many of y'all are like liberals...you won't accept facts.

There must be crack in that one. I eat on so much I'm not even hungry for the main BBQ course.

Makes one hell of a juice/grease gravy to pour over rice. It's one of my lazy meals for the family that comes out delicious, served usually with white corn or smothered green beans.

For just lagniappe I'll smoke sausage at the end of a brisket or shoulder smoke. Some preferences:

HEB Beef or Hatch
Kiobassa Polish or Beef
Bellville Meat Market has some interesting offerings
Prasek's

FTR, I love my Teets, Kartchners, and Rabideaux's, but prefer to save it for dishes here in TX.
