I'm going to smoke a tri tip on the Bullseye on Sunday. Haven't decided on a side dish but I'm leaning heavily towards mac & cheese.

Sunday is beef plate ribs on the smoker for me and the family, Monday we are going to have about 20 people over. I'll be smoking 6 racks of spare ribs and I'll throw 10 pounds of leg quarters on the kettle. Should be a shitload of non-social-distanced fun.

Gonna smoke a couple of pork butts Sunday night for the staff of the nursing home where I work on Monday for Memorial Day. It’ll be a skeleton staff of probably 20-25, so two small butts or one big one should get the job done, along with buns for PP sandwiches and chips. I may experiment with some honey chipotle ribs on Sunday afternoon, that I saw on the “how to bbq right” YouTube channel today.

19lb prime packer for the show stopper. Burgers, dogs, etc to munch on here and there.

I have a brisket and a pork butt trimmed and seasoned for the smoker. Gonna put those on at midnight tonight.
Also going to cube some jowls and smoke them for a couple hours, then drop them in some grease. Serve dat with some fresh honey.

Looking right! I was going to put mine on before bed but it’s only 10# and I didn’t wanna risk waking up at 3-4 o clock needing to tend to it.

Looks good. My tenderloin was really good last night but I have so many leftovers that the Butt may have to wait until Monday to be grilled.

Well I ditched the clearly popular burger idea and now I’m loading all of this into the smoker. At noon. Because I apparently like to stay up late.

My brisket today.
Snake River Farms Wagyu. First one I’ve ever done. Turned out pretty good. It was slightly dry but not really an issue.
