Any ideas on how to cook them other than deep fried?

I've yet to find a meat that doesn't taste great after cooking low and slow over smoke from the right special of wood.

Red snapper works well blackened.

Half-shell. Make a garlic/citrus/herb/shallot/S&P compound butter. Spread it on, add more S&P, top w/herb sprigs of your choice and some thin lemon or orange slices. grill at med-high for about 10-15 min depending on weight and thickness of fish. Sublime.

Make some black eyed peas, saute some mushrooms in butter/salt/pepper, season snapper with salt, pepper, red pepper flakes and cover with red chili pepper. Put just enough olive oil and butter in your cast iron pan to cover the bottom and cook the snapper.
Layer of black eyed peas, snapper, top with mushrooms. I made this last night.

Can’t do half shell. Already filets

I just cooked some whole Red Snapper Monday on my pellet grill and they came out really good. I'm sure you could grill the filets and get good results also.

I’ve never seen anybody deep fry red snapper like catfish in Louisiana. Pan fried is different

That's how I usually cook it. Or pan seared with butter if I don't want to mess with the grill.

Grilled on grates, no need for foil
