Fast forward to today and we have two kids 5 and 4 who are not baptized. This is by our choice as we want our children to independently make a decision later in life on what religious route they would like to take, if any.
Then reaffirm this stance to your grandmother.

Tell her you did, in a private ceremony.

I would tell her how much you love her. Bring the kids in to tell her how much they love her. I would say that's up to them though and if she wants to ask them to do it, then that's up to her.
I say that with both kids being baptized before they had any say, however both have also had immersion protestant baptism on their own request.
Let the kids spend some time with their great grandma before she leaves the world. If she pushes it again, I'd just tell her that you aren't down with it. Or continue to change the subject back to herself and get some time with her. I wish I had videoed more of my grandparents and their stories before they left this Earth.

Weeelllll.... not quite how the catholic church works.

Weird request.
Not really. If the kids were to die unbaptized, they don;t get into heaven. GMaw wants that protection for them.
OP Why didn't you baptize your kids? "I want them to make a decision on their own one day" is bullshite. You can baptize them and they could choose later in life to not be a devout Catholic such as yourself. At least, start them on the path.

Seems to me your grandmother has more pressing issues.
Its not weird among older Catholics. Like the OP, I was raised in a Catholic family and chose not to baptize my children. It affected my mother greatly. She was raised to believe it was vital for the baby's soul to get into heaven. Intellectually she knew this was weird but on a emotional level it concerned her. The church even changed its viewpoint on limbo (kinda) in 2007 but its still a part of older Catholics beliefs.

A tough situation.
I was baptized Catholic as a baby, mainly because my father's side of the family were hard-core Catholics. My father wasn't a church goer though, so I grew up going to church with my mother (no pics) who was Baptist. When I was 13, I decided I wanted to join the Baptist church, so I was baptized again. I've never really considered myself a Catholic (even though my aunt says "once you're baptized a Catholic, you'll always be a Catholic!")
Point is, consider doing it. Your kids can always change their minds later. Then again, I understand you and your wife wanting to stick to your guns. Good luck either way, baw.

Not everyone believes in this.

Or they could choose not to. Like they did.

Baptize those kids man. They can choose later to join another church if they want to. Should have been done when they were 6 weeks old.

Oh really? You mean the thing that already happened is an option?

All these rules. If one can't just live their life doing right by others and get into heaven, then that place isn't nearly as great as folks make it out to be.

Tell her you did....she won't know the difference

And this is what’s wrong with people these days, no God/Religion in their lives leads to no guidance or standard to live by. If you are Catholic then raise your children to be Catholic and follow that religion.

Tell granny that she can’t fight to save the souls of your kids in heaven, but you’re not baptizing them now.
