I am from Missouri too. Let me help you out. We are not know for vinegar based sauces. That is North Carolina. Kansas City is known for it's sweet, tomato based sauce. Mizzou is a university, not a state or type of BBQ.

Tennessee is a tossup between Memphis BBQ (e.g., Payne's pork sandwich, Neely's Interstate ribs) or Nashville hot chicken (presumptively Prince's Hot Chicken).

My vote, at least towards the state of Tennessee's representation, is to one of the Memphis BBQ shops as it has been around much, much longer.

I'm not saying it's the best meal in the state, but it is very unique to central Illinios. I have lived all over the country and haven't seen it, even if it is an open faced dish, it still has a cult following from visitors. This is a screenshot from D'arcy's Pint in Springfield. If you go to Springfield and ask someone for a recommendation of where and what to eat, they will say D'arcy's & a Horseshoe. That's why I posted it. Of course there are tons of other foods that could be listed, but this is my favorite comfort food and it is very unique.

Can't a horseshoe be made up of almost anything on the menu? I think I saw this place on DDD.
