Thats tough. Plenty have been mentioned but we have a lot of choices to pick from in LA:

BBQ Shrimp
Boiled crawfish
hot homemade sausage or seafood gumbo on cold day
charbroiled oysters in garlic butter sauce from Dragos
melty pepperjack Boudin ball from billys
shrimp poboy from Parkway
crawfish etoufee or a crawfish julie sauce over penne
Trout Meuniere covered in a lump crabmeat nicholas sauce
etc.

You're picking breakfast tacos as the best bite from Texas. That's just silly.

Even brisket is a better option. Or even a brisket taco. Just keep the pointless filler eggs away.

No, you're wrong. That's eastern Carolina bbq. As far as tomato based sauces, different regions have different tastes based on the amount of tomato used and the other ingredients like vinegar, sugar, etc.

Each year, I have several out of townees come visit me and they would say BBQ shrimp sauce. A few Canadians even said to substitute the gravy on poutine with the BBQ shrimp sauce and you have the best meal ever.
