Vegetable side dishes for someone that doesn’t like vegetables

Suggestions would be appreciated.
I’m thinking some roasting in the oven.
My son wants to eat healthier but doesn’t like veggies.

Roasted cauliflower with parmesan
You just have to suck it up. I don't like broccoli, but I eat it 3x a week.

I agree that roasting is the first thing to try. Its brings out the sweetness and the caramelization also adds flavor.
Adding parm cheese to almost any vegetable when roasting works. I like to add that and some fresh squeezed lemon juice and/or lemon zest along with chopped green onions to asparagus which is one of my favorite roasted vegetables.
Roasted sweet potatoes are delicious also. I peel and cut into discs and toss in a little olive oil. Sprinkle with S&P or whatever seasoning you like and roast, turning once.

Baked whole yellow squash tastes a bit like corn to me. I bake them in foil. Then, cut them in half and put butter, parm and S&P. Delicious.

Yep, try bacon and cheese to ease him in. Then, at some point, he will start to eat them.
A good, cold Caesar salad is what go me to eat salad.
How old is he?

Cauliflower rice is really good and is easy to prepare. You just microwave it in the bag it comes in. Use it just as you would use ordinary rice.

Wait till summer and introduce him to grilled vegetables. Some of my favorite are grilled okra, yard long beans, corn, asparagus, zucchini and yellow squash and thick onion slabs.
Everybody that has tried grilled okra has loved it and many had never thought of grilling it. I grow it in my garden and have way more than I can use in the summer months when they go into full production.
Fried vegetables are also good, but not on the healthy scale with the oil, coatings and such, but a good treat every now and then.

I love veggies and salads. Even eat them raw.
I’m happy with a simple steamed vegetable with chicken stock.
I know what he’s going through. I used to hate them as a kid.
Mostly a texture thing.

Same here for the most part. I used to have to leave the house when my Dad made mustard greens. I couldn't take the smell. Now, the smell makes my mouth water. I've had them 3 nights this week. Heaven!

Roasted asparagus with some olive oil, salt, pepper, crushed red pepper, lightly topped with parmesan.
Roasted brussels with some pancetta or bacon is always a good option, too.
My wife and I have been getting some pasta kits that have lentil pasta: alfredo, broccoli and cheddar, and marinara are three of the mixes we've tried.
Grilled veggies (squash and zucchini with some Tony's) are also a good choice. Plenty of options out there, but roasting is always a good way to go to start!

OP, do this. Delicious.
I also love eating fresh bell peppers, broccoli, baby carrots, and cherry tomatoes. Pour 2 Tbsp of favorite dressing into a small dipping saucer, and dip fresh veggies into that.
Make sure you're measuring out the dressing though, otherwise you're defeating the purpose of trying to eat healthier.
