It’s like going to the Coke museum and trying Bentley. You have to do it.

Man I was pissed!
Have been on stage the last 2 years... didn’t sniff it this year! Had a few good ones when I made the rounds, but man did I taste some terrible gumbo. I didn’t think mine was great.... but compared to many I thought we could’ve been top 3 in the category.
They prolly need to tighten up a couple things for next year. Make it a hard serving time at 12. People were running out early... we served probably 14 gals. Make sure people are making enough gumbo too, some of the pots looked small. We Used all but 27 of the 1000 ct box of spoons. Was insane for about an hour and a half.
Great weather and great time though!

Yeah we were pretty much nonstop serving for almost 3 hours. Luckily I didn’t see too many people throwing full cups of ours away like I saw them toss away other people’s

My buddy who was cooking with us knows CMac pretty well and I talked with him early that morning. I wanted to get over to your end to try it. Couldn’t get away from the pot though...
Ol boy on the side of us pretty much boiled water and dropped everything into it. Was the worst one I tasted out there.
What was up the guy serving what looked like some jam?

Damn, I'm kinda scared to say which one was ours, hopefully we didn't fall into the terrible category.

The Ol boy at the Triad tent told me... here’s some gumbo, if you don’t like there’s the trash can.
Guess he had witnessed it being thrown away a good bit

One of the seafood gumbos was orange and tasted like etouffee. I mean, it didn't taste bad, but I didn't get gumbo from it.
The booth next to the Who Dat booth, with the Mardi Gras decor, tasted definitely burnt. Phil's was so bad that I had temporarily forgotten that first burnt one.
I still enjoyed the event and the weather was awesome, but agree they need more than 1 beer booth and the teams need to either be told to prepare more or they make the tasting a concrete time window. There were people coming in for the first time when we were leaving, and many teams had been out for well over an hour at that point.

Had a bunch of people tell me the same thing...
Somebody over there made an etoufee, somebody’s is burnt and somebody is serving some jam.
Kept thinking... what the hell is going on over there. Is the Phil guy the one from Phil’s oyster?

Yeah, it was a booth with the Phil's Oyster Bar logo. Now.. I don't know if that necessarily means it is a Phil's employee but it was definitely sponsored by the restaurant.

No, you guys were out when I went to that side. We did the back booths and the entire side by the entrance before we did yours.

So there were no good seafood gumbos?
Posted on 2/11/19 at 9:03 pm to mpar98
I didn’t get to taste many, way too busy cooking and serving. The one seafood gumbo I tasted was okay...nothing I’d be proud of serving but it wasn’t awful.
By the time we ran out and had a chance to step away there was only one booth with gumbo left and it wasn’t anything to write home about.
