I used to go to a restaurant that served the best Kung Pao Chicken I ever had outside of San Francisco. They changed ownership 7 years ago and changed the recipe. I haven't found anything that comes close since. I miss it every day.
So now I just get different dishes from various Chinese, Thai, Vietnamese, and sometimes Korean places. I have some dishes I like. But they don't fill the vacuum left by my favorite eatery changing hands.
It didn't have a glistening, sugary sauce. It wasn't over sauced. It was hot. It had real chicken. It didn't have celery. It had carrots, water chestnuts, green onions, at least one other diced fibrous root vegetable that I'm not sure about. No broccoli or mushrooms or baby corn or bell peppers. 98% of the time the chile peppers could be cut with a plastic knife. They also kept two jars of hot pepper oil by the register. (It was mostly takeout, they had fewer than ten tables in the dining area.)
I'm sad. It was so awesome. It was perfect.

I like to start off with Hot & Sour Soup and for an entrée I'm partial to boneless fried chicken with the stir fried vegetables in a brown sauce over it and a side of shrimp fried rice.
I also like eggrolls or spring rolls to go with it.
